Prepare a shaker full of ice then add the Earl Grey infused Gin, next add the Lemon juice, next add the Simple syrup, next add the Egg white. Shake for half a minute or so. You should get a mild meringue on top when you pour.

To infuse the gin, soak 1/4 cup loose Earl Grey tea leaves in a liter of gin for 2 hours. Don't squeeze the leaves when you strain them it will make your gin bitter.
